Hot spinach and mushroom salad

Ingredients:
1 1/2 lbsSpinach
2 tbspCorn oil
4 ozMushrooms, slice thin
1 cupOnions, diced
4 tspLemon juice, fresh
4 tspWhite vinegar
2 tspSugar
Black pepper, fresh ground
2 tbspYogurt, plain, low-fat
Procedures:
1Recipe by: jo anne merrill preparation time: 0:15 wash fresh spinach and remove all tough stems; drain well.
2In hot oil, saute mushrooms and onions until onions are wilted.
3Add lemon juice, vinegar, sugar and pepper; mix well.
4Stir in spinach and cook only until spinach begins to wilt.
5Remove from heat and stir in yogurt.
6Serve immediately.
