Ingredients:
2 medCucumbers
1/2 cupGreen pepper, chopped
2 cupShredded lettuce
2 tbspGreen onion, finely chopped
3/4 cupCarrot, grated or shredded
2 tbspFresh parsley, finely
-chopped
1 cupTomato, fresh diced
1/4 cupRadish
1 tbspVegetable oil
3 tbspLemon juice, fresh
1 tspSalt
3/4 tspCoarsely ground pepper
Procedures:
1Pare cucumber, halve lengthwise, and discard seeds and center pulp.
2Dice cucumber flesh and measure 2 cups.
3Combine all ingredients in a large bowl; toss until well mixed.
4Serve immediatly.
