| 1 | Cook whole potatoes in boiling water until fork tender. |
| 2 | Remove skins and slice crosswise in thin slices. |
| 3 | Mix next 6 ingredients. |
| 4 | Layer 1/3 potato slices in serving bowl. |
| 5 | Spread with 1/3 cup mayonnaise mixture. |
| 6 | Sprinkle with 1/3 cup chopped parsley. |
| 7 | Repeat layers twice. |
| 8 | Cover and refrigerate overnight. |
| 9 | Must be made ahead. |
