Ingredients:

| | Boneless chicken breasts | | 1
| tbsp | Fresh lemon juice | | 1
| tsp | Salt, optional | | 1/2
| tsp | Pepper, fresh ground | | 1/2
| tsp | Grated lemon zest | | 3/4
| lbs | Fresh asparagus, trimmed | | 1
| tbsp | Olive oil | | 2
| tsp | Seasoned dry bread crumbs | | 4
| | Slices low-fat turkey ham | | 8
| | Lemon slices, for garnish |

Procedures:
| 1 | In med. bowl, combine chicken, lemon juice, ?of the salt, pepper and lemon zest. | | 2 | Toss to mix. | | 3 | On a large flat plate, coat the chicken with the seasoned bread crumbs. | | 4 | Spray pam on a non-stick skillet and heat over medium-high heat. | | 5 | Add the chicken and cook, turning once, until golden brown outside and white throughout (but still juicy--about 5-7 minutes). | | 6 | Place chicken on a serving platter. | | 7 | Meanwhile, steam the fresh asparagus for approx. 5-7 minutes. | | 8 | When done, season the asparagus with the remaining lemon zest and salt and pepper. | | 9 | Divide asparagus into 4 bundles. | | 10 | Wrap each asparagus bundle with a slice of the turkey "ham" and place on top of chicken. | | 11 | Garnish with lemon slices. | | 12 | Judy garnett,pjxg05a raleigh,nc |
