Luby's spanish slaw with dressing

Ingredients:
SLAW
2 lbsCabbage
1/4 cupParsley sprigs, coarsly
-chopped
1/3 cupShredded carrot
1/2 cupGreen bell pepper strips
1 tbspDiced red bell pepper
1/4 cupGreen onions, sliced 1/8
-inch thick
1 cupDill pickles, sliced 1/8
-inch thick
DRESSING
1/2 cupWater
1/3 cupDill pickle juice
1/4 cupWhite vinegar
1 tbspSugar
1 tbspSalad oil
1 tspSalt
1 tspFreshly ground black pepper
Procedures:
1Spanish slaw discard outer leaves from cabbage; wash head and cut in half.
2Remove center core.
3Cut into 1/8-inch strips against the vein.
4Cut pieces into 2-inch portions.
5Place in a large serving bowl.
6Add parsley, carrot, bell peppers, onions and pickles.
7Pour dressing over top and mxi well.
8Chill until ready to serve.
9Dressing in a medium-size bowl, whisk together water, pickle juice, vinegar, sugar, oil, salt and pepper.
