Ingredients:
2 cupCold white chicken meat
1 tbspFinely chopped (fresh)
Chopped tarragon or 1 tea.
Dried tarragon soaked in
2 Tablespoons of white wine.
1 cupMayonnaise
1 cupSour cream
Salt and pepper to taste
2/3 cupMacadamia nuts (chopped)
4 medHard cooked eggs, quartered
1/4 cupCapers
Procedures:
1Directions: combine the chicken and tarragon.
2(if using dried tarragon, soak it for 45 minutes in white wine) add mayonnaise to sour cream and beat well.
3Taste for seasoning.
4Reserve some of the mayonnaise mixture for garnish and toss the chicken and nuts with the remainder.
5Arrange salad on bed of greens and garnish with reserved mayonnaise mixture, the eggs and capers.
