Melon, cucumber & tomato salad

Ingredients:
1/2 cupSalad oil
1/4 cupLemon or lime juice
2 tspSugar
1/2 tspSalt
1/4 tspPepper
1 tbspFinely chopped parsley
1 tbspFinely chopped fresh mint
1 smallCasaba or honeydew melon
1 smallEnglish cucumber
-- peeled if desired
-- thinly sliced
4 largeFirm-ripe tomatoes, peeled
-- cubed (abt. 2 lb)
Procedures:
1Combine oil, lemon juice, sugar, salt, pepper, parsley and mint.
2Mix until well blended.
3If made ahead, cover and refrigerate until next day.
4About 1 hour before serving, cut melon in half; scoop out seeds.
5Cut melon into thin wedges and remove rind.
6In a salad bowl, combine melon, cucumber and tomatoes.
7Stir dressing again; pour over salad and mix gently until well coated.
8Cover and let stand at room temperature for about 45 minutes, stirring once or twice.
9Yield: 6 to 8 servings.
