Caribbean-style chicken with black beans

Ingredients:
Nonstick cooking spray
1/4 tspSalt
1/4 tspPepper
1 lbsChicken breasts without skin
2 tspButter
1 Onion
2 Cloves garlic, minced
1 cupChicken broth
1 1/4 cupLong-grain rice
8 ozTomato sauce
1/4 cupLight rum
1 Green bell pepper, seeded &
-diced
1/2 tspCinnamon
1/4 tspCloves, ground
1/4 tspSalt
1 dashCayenne pepper
16 ozBlack beans, drained
Procedures:
1Coat a skillet with nonstick cooking spray.
2Salt and pepper chicken and cook in skillet over med. heat for 8-10 mins, or til pieces have begun to brown.
3Place in a med. bowl, let cool, and cut into small strips.
4In the same skillet, melt marg.
5Add onion and garlic.
6Skim fat off top of broth and add 2 tablespoons of broth to skillet.
7Cook for 5-6 minutes or til onion is soft, stiffing frequently.
8Meanwhile, prepare rice.
9Add tom.
10Sauce, remaining broth and rum to skillet and mix well.
11Add green pepper, reserved chicken and seasonings.
12Bring to a boil.
13Reduce heat and simmer, uncovered, 15 min or til chicken is tender and liquid has thickened.
14Stir in beans and heat another 2-3 mins.
15Place rice on large platter and top with chicken and bean mix
