Oriental brown rice salad

Ingredients:
4 cupCold cooked brown rice
1/4 cupPeanut oil
1 tspSalt
1/2 tspPepper
1 tspSugar
1 tspRoasted sesame oil
1 medCarrot, peeled and diced
1/2 cupChopped snow peas
1/2 cupFrozen corn kernals
1/4 cupRice vinegar
1 Celery stalk, diced
1/2 Red bell pepper, diced
3 Green onions, chopped
2 tbspChopped fresh parsley
Procedures:
1Place the rice in a large mixing bowl.
2In a small mixing bowl, combine the peanut oil, salt, pepper, sugar, and sesame oil.
3Stir until the sugar dissolves, then pour over the rice, toss, and set aside.
4Steam the carrot, snow peas, and corn in or over a small amount of boiling water for 1 minute.
5Rinse the vegetables in cold water.
6Drain and stir the vegetables into the rice.
7Add the remaining ingredients and toss to mix well.
8Refrigerate for 1 to 2 hours and serve cold.
