Pasta and smoked salmon salad

Ingredients:
3/4 lbsSmoked salmon cut in strips
2 quartWater
3/4 lbsLinguini or spaghetti, dry
2 tbspWhite vinegar
1/2 cupOnion, finely chopped
1 cupWhipping cream
3/4 cupDry white wine
1 tbspDijon mustard
1/4 cupGrated parmesan
1/2 cupFresh parsley spriggs
Procedures:
1Bring water to boil, cook pasta until tender; drain.
2As pasta cooks, boil venegar with onion in a frying pan over high heat until vinegar evaporates, about 2 minutes.
3Add cream, wine and mustard.
4Boil, uncovered, stirring often, until sauce is reduced to 1-?cups.
5Add hot drained pasta; lift with forks to coat with sauce.
6Divide pasta and sauce evenly amoung 4 dinner plates; sprinkle each with 1 tb parmesan.
7Arrange salmon beside each serving of pasta, garnish with parsley.
8Season with salt and pepper.
