Ingredients:
FOR THE SALAD
3 cupCooked and cooled rotini
2 cupShredded Swiss cheese
1 pack10 oz frozen cut green beans
.thawed and drained
1 pack10 oz frozen green peas
.thawed and drained
1 cupGreen pepper strips cut in
.half
1/2 cupSliced scallions
1 cupChopped cucumber
FOR THE DRESSING
1/3 cupMayonnaise
1/3 cupPlain yogurt
3 tbspGrated parmesan cheese
1 tbspLemon juice
1 1/2 tspDried dill
1 tspSugar
1/4 tspSalt
1/4 tspPepper
Procedures:
1In a small bowl, combine all the dressing ingredients.
2Mix until well-blended; set aside.
3If not serving immediately, cover and chill until ready to use.
4Place the cooled rotini in a large bowl and toss with the remaining ingredients, except the dressing.
5Cover and chill until ready to use.
6Just before serving, mix the dressing again and toss into the salad.
