Ingredients:
20 Garlic, minced
2 cupBroccoli flowerettes, blanch
1/2 cupRed pepper, thinly sliced &
1/2 cupCarrot, shaved
1 Tomato, peeled, seeded and
1/2 tspBasil
1/2 lbsCorkscrew pasta, cook &
-drain
1/4 cupOlive oil
1 tbspRed wine vinegar
Salt and pepper
Procedures:
1Spray large skillet with vegetable cooking spray, according to directions.
2Saute garlic.
3Add broccoli, red pepper, carrot, tomato and basil;stir to heat through.
4Add sauteed vegetables to cooked macaroni and toss well.
5Pour on olive oil and vinegar.
6Season with salt and pepper; toss well.
7Serve warm or cold.
