Pear & parsnip salad

Ingredients:
3 cupDiced Parsnips
(1 ?Lbs.)
2 cupWater
3 tbspThinly Sliced Green Onions
Honey-Yogurt Dressing
3 medSize Firm, Ripe Pears
1 tbspLemon Juice
Ground Black Pepper (Opt)
Procedures:
1Combine parsnips & 2 c. water in a small saucepan; bring to a boil.
2Cover & reduce heat & heat 5 min. drain & rinse under cold water.
3Drain well.combine parsnips, green onions & ?c. plus 2 t. honey- yogurt dressing in a medium bowl.
4Stir well.
5Cover & chill.
6Cut pears in half lengthwise; core & cut lengthwise into thin slice, keeping slices intact.
7Brush cut sides with lemon juice.
8Place 1 cut pear half on each of 6 plates, separating slices to form a fan.
9Top each with ?c. parnsip mixture & 1 t. remaining honey-yogurt dressing.
10Sprinkle with pepper if desired.
