Radiatore salad with salmon and papaya

Ingredients:
1 lbsRadiatore or Rotini
-OR other medium pasta
-shape, uncooked
6 tbspVegetable oil
Freshly ground black pepper
1 lbsBoneless salmon fillets
- skinless, fresh or frozen
- cooked and chopped, OR...
15 oz-Canned salmon
- drained and flaked
1 Papaya, peeled
- seeded and chopped*
1 cupCherry tomatoes
1 bunchScallions, finely sliced
1 Yellow bell pepper, chopped
1 medCucumber, quartered
-lengthwise and sliced
1 smallJalapeno, seeded, ribs
- removed and finely minced
2 tbspChopped fresh cilantro, OR
2 tsp-Dried cilantro
3 tbspRice wine vinegar
3 tbspWhite wine vinegar
3 dropHot sauce
Procedures:
1* (if unavailable, substitute 1 mango or 2 peaches, or 2 nectarines, or 1 15-oz.
2Can papaya or favorite fruit in light syrup, drained and chopped) prepare pasta according to package directions; drain and transfer to a medium bowl.
3While pasta is still warm, mix in vegetable oil.
4Season with freshly ground black pepper.
5Set pasta aside to cool.
6In a medium mixing bowl, add the salmon, papaya, tomatoes, scallions, yellow pepper and cucumber.
7Toss together with pasta.
8In a small bowl, combine the jalapeno, cilantro, both vinegars and hot sauce.
9Toss the pasta with the dressing and refrigerate.
10Serve well chilled.
11Serves 6-8 each serving provides: 373 calories; 19.4 g protein; 40.1 g carbohydrates; 14.9 g fat; 33.7 mg cholesterol; 54 mg sodium.
