| bunch | Scallions, finely sliced | | 1
| | Yellow bell pepper, chopped | | 1
| med | Cucumber, quartered | | | -lengthwise and sliced | | 1
| small | Jalapeno, seeded, ribs | | | - removed and finely minced | | 2
| tbsp | Chopped fresh cilantro, OR | | 2

Procedures:
