Radicchio & white bean salad

Ingredients:
1 tbspMinced shallot
2 15-oz cans small white
Beans, drained, rinsed and
Drained again
1 6-oz head radicchio, leaves
Separated, shredded
1 smallRed bell pepper, stemmed
Seeded and minced
1/3 cupFinely minced parsley
10 Kalamata olives, pitted
Coarsely chopped
3 tbspRed wine vinegar
1 tspMinced garlic
1 tspGrainy mustard
2 tbspOlive oil
1/4 tspSalt
Freshly ground black pepper
To taste
Procedures:
1Put the shallot into a small bowl and cover with water.
2Let sit 10 minutes to reduce the acidity.
3Drain and press with paper towel to remove excess moisture.
4Combine the shallots with the drained white beans.
5Stir in the radicchio, bell pepper, parsley and olives.
6Put the vinegar, garlic, mustard, olive oil, salt and several grindings black pepper into a small jar.
7Shake to blend.
8Pour over the salad, stirring to blend.
9Serve at room temperature.
