Red potato salad with bacon - frugal gourmet

Ingredients:

2 lbsRed potatoes , small
1/3 lbsBacon , diced
1 cupYellow onion , peeled, thinly

4 Scallions , chopped
1/4 cupMayonaise
1/2 tspDry mustard (Coleman's)
1 tbspWhite wine vinegar
1/2 cupOlive oil
Sliced Salt
Black pepper , feshly ground
2 Eggs , hard boiled
Procedures:
1Wash the potatoes and drain.
2Using a paring knife, trim a band of the peel about ?inch wide (depending on the size of the potatoes) around the circumference of each potato.
3This will form an attractive "belt".
4Boil the trimmed potatoes gently in ample, lightly salted water until just tender.
5The potatoes are done as soon as they pierce easily with a sharp knife.
6Carefully drain, spread on a tray, and allow to cool.
7Cook the bacon in a medium sized frying pan until almost crip.
8Add the onion and cook until limp.
9Drain off any excess fat.
10Place the cooled potatoes in a bolw along with the cooked bacon and onion, and the scallions.
11In another bowl, blend together the mayonnaise, dry mustard, vinegar, oil and salt and pepper to taste add to the bowl of potatoes and toss together.
12Fold in the hard-boiled eggs.
13Cover and refrigerate.
