Ingredients:

| lbs | Red potatoes , small | | 1/3
| lbs | Bacon , diced | | 1
| cup | Yellow onion , peeled, thinly | | | - | | 4
| | Scallions , chopped | | 1/4
| cup | Mayonaise | | 1/2
| tsp | Dry mustard (Coleman's) | | 1
| tbsp | White wine vinegar | | 1/2
| cup | Olive oil | | | Sliced Salt | | | Black pepper , feshly ground | | 2
| | Eggs , hard boiled |

Procedures:
| 1 | Wash the potatoes and drain. | | 2 | Using a paring knife, trim a band of the peel about ?inch wide (depending on the size of the potatoes) around the circumference of each potato. | | 3 | This will form an attractive "belt". | | 4 | Boil the trimmed potatoes gently in ample, lightly salted water until just tender. | | 5 | The potatoes are done as soon as they pierce easily with a sharp knife. | | 6 | Carefully drain, spread on a tray, and allow to cool. | | 7 | Cook the bacon in a medium sized frying pan until almost crip. | | 8 | Add the onion and cook until limp. | | 9 | Drain off any excess fat. | | 10 | Place the cooled potatoes in a bolw along with the cooked bacon and onion, and the scallions. | | 11 | In another bowl, blend together the mayonnaise, dry mustard, vinegar, oil and salt and pepper to taste add to the bowl of potatoes and toss together. | | 12 | Fold in the hard-boiled eggs. | | 13 | Cover and refrigerate. | | 14 | Serves 4 to 6 |
