Ingredients:
1 cupCooked rice, cooled
- (cooked in chicken broth)
1/2 cupChopped fresh tomatoes
2 Jalapeno peppers, minced
2 tbspRed wine vinegar
1 tbspVegetable oil
1 tspSnipped fresh cilantro
-OR- parsley
1 Garlic clove, minced
1/2 tspBasil
1/4 tspCrushed thyme
Procedures:
1Combine rice, tomatoes and peppers in medium bowl.
2Whisk remaining ingredients in small bowl; pour over rice mixture.
3Chill 2 to 3 hours so flavors will blend.
4Stir before serving.
