Ingredients:
2 tbspWhite wine vinegar
1 tbspOlive oil
2 dropHot pepper sauce (optional)

1 Garlic clove, minced
1/4 tspGround white pepper
2 1/2 cupCooked rice
-(cooked in chicken broth &
1/5 tspSaffron)*
-- cooled to room temp.
1/2 cupDiced red pepper
1/2 cupDiced green pepper
1/4 cupSliced green onions
-- including tops
1/4 cupSliced ripe olives
Lettuce leaves
Procedures:
1Combine vinegar, oil, pepper sauce (if desired), garlic, and white pepper in large bowl; mix well.
2Add remaining ingredients except lettuce; toss lightly.
3Serve on lettuce leaves.
