Ingredients:
3 cupFlour
1/2 cupSugar
1 cupButter, softened
1/2 tspSalt
FILLING:
4 Eggs
1 1/2 cupLight or dark corn syrup
1 1/2 cupSugar
3 tbspButter, melted
1 1/2 tspVanilla extract
2 1/2 cupChopped pecans
Procedures:
1Crust: in a large mixing bowl, blend together flour, sugar, butter and salt until mixture resembles coarse crumbs.
2Press firmly and evenly into a greased 15x10x1" baking pan.
3Bake at 350 °F for 20 minutes.
4Meanwhile, in another bowl, combine eggs, syrup, sugar, butter and vanilla.
5Stir in pecans.
6Spread evenly over hot crust.
7Bake at 350°F for 25 minutes or until set.
8Cool on a wire rack.
9Yields: 4 dozen
