Sauteed steak salad

Ingredients:
1 Romaine lettuce
1 Watercress
1/2 English cucumber
1/4 cupCrumbled blue cheese (option
-al)
Red onion rings
Topping
2 tbspVegetable oil
2 tbspButter
1 lbsSirloin steak, cut in bite s
-ize pieces
1/4 cupRed wine
Vinagrette dressing
1/4 cupCider or red wine vinegar
1 tspGranulated sugar
1 tspDijon mustard
1 Cl Garlic, minced
1/2 tspSalt
Freshly ground pepper
3/4 cupCorn oil
Procedures:
1Fat grams per serving: approx. cook time: 10 vinaigrette dressing: in a small bowl, whisk together vinegar, sugar, mustard, garlic, salt and pepper to taste.
2Gradually whisk in oil.
3Cover and refrigerate while preparing salad.
4Salad: wash and dry lettuce and watercress.
5Tear lettuce into bite size pieces.
6Remove coarse stems from watercress.
7Cut cucumber in half lengthwise and slice.
8In a salad bowl, combine lettuce, watercress and cucumber.
9Drizzle with ?cup of the dressing; sprinkle with blue cheese, if using, toss gently.
10Topping: in a large heavy skillet, heat oil and butter until sizzling; cook steak and mushrooms, stirring often, for 2 - 3 minutes, for med rare, or longer for welldone.
11Stir in wine and immediately pour over salad.
12Garnish with red onion rings and serve immediately.
13Pass remaining dressing separately.
