Shrimp salad with fresh dill

Ingredients:
1 lbsSmall shrimp *
*cooked, shelled, deveined
1/2 cupFinely diced celery
1/2 cupCucumber, finely diced
-(peeled, seeded)
1/4 cupFreshly snipped dill or
1 tspDill weed
2 tbspMinced shallots
-or yellow onion
1/2 cupMayonnaise
2 tbspSour cream
2 tbspLemon juice
1 tbspDijon mustard
1 tbspAnchovy paste
1/8 tspFreshly ground black pepper
Salt to taste
Procedures:
1Place the shrimp, celery, cucumber, dill and shallots in a large mixing bowl.
2Whisk together the rest of the ingredients except the salt, and pour the dressing over the shrimp.
3Toss well.
4Taste the salad and add salt, if needed.
5Toss well again.
6If the salad seems dry, add an extra tablespoon or 2 of sour cream.
7Cover the bowl and chill it for several hours.
8Mound the salad on crisp lettuce leaves or spoon it into hollowed-out tomatoes.
