Sizzling goat cheese salad

Ingredients:
4 cupTorn mixed greens
1/2 cupPitted ripe olives
6 Whole dried tomatoes in oil
Drained and chopped
2 tspSliced green onions
1/4 cupSalad oil
1/4 cupTarragon vinegar
2 tbspWater
1 tbspWalnut oil or salad oil
1 tbspDijon mustard
1 Egg
1 tbspWater
2 tbspCornmeal
1 tbspFine dry bread crumbs
1 tbspSesame seed, toasted
1 tbspGrated Parmesan cheese
8 ozChevre (goat's cheese)
2 tbspMargarine
4 smallPita rounds, split
-horizontally, cut in wedge
-and toasted
Procedures:
1On a serving platter arrange greens, olives, tomatoes, and green onions.
2Cover and chill.
3For dressing, in a screw top jar combine salad oil, vinegar, 2 tablespoons of water, walnut or salad oil, and mustard.
4Cover and shake until well combined.
5In a small bowl combine egg and 1 tablespoon water.
6In a shallow bowl combine cornmeal, bread crumbs, sesame seed, and parmesan cheese.
7Divide chevre into 16 equal portions; shape into balls and flatten into 1 ?inch diameter patties.
8Dip each patty into the egg mixture; coat with cornmeal.
9Cover and chill.
10At serving time, in a large skillet melt margarine or butter.
11Add cheese patties and cook over medium heat for 3 to 5 minutes or until golden, turning once.
12Arrange on top of greens mixture and cheese.
13Serve with pita bread wedges.
