Ingredients:
1 cupBulgur wheat, uncooked
2 cupBoiling water
1/3 cupVegetable oil
1/3 cupLemon juice
2 tspSalt
1 tspPepper
1/2 cupParsley, chopped
3 tbspMint, fresh chopped or
2 tspMint, dry crumbled
6 Green onions & tops, minced
2 Tomatoes, chopped
Procedures:
1Pour boiling water over wheat in a bowl.
2Let stand one hour.
3Drain well and return to bowl.
4Add remaining ingredients and blend well.
5Chill at least two hours.
6Serve on a bed of lettuce
