Tomatoes terrebone

Ingredients:
1 canSpinach (27 oz.)
1 Large onion, chopped fine
1/8 tspPepper
1 tspSalt
1/4 tspOregano
3 tbspVegatable shortening
2 Eggs, beaten
6 Large ripe tomatoes
Bread crumbs
Pareve margarine
Procedures:
1Drain and rinse spinach.
2Pick stems from leaves and squeeze dry.
3Saute" onion in shortening until transparent; add salt, pepper, and oregano, and stir.
4Mix spinach and eggs together.
5Add to onions and cook until moderately dry, stirring often so mixture does not stick to bottom of pan.
6Cut tops off of tomatoes.
7Scoop out pulp (you may save for other uses).
8Stuff tomatoes with spinach mioxture.
9Sprinkle with bread crumbs and dot with margarine.
10Place tomatoes in baking pan and bake a 350°F. for 30 min
