Ingredients:

| can | Spinach (27 oz.) | | 1
| | Large onion, chopped fine | | 1/8
| tsp | Pepper | | 1
| tsp | Salt | | 1/4
| tsp | Oregano | | 3
| tbsp | Vegatable shortening | | 2
| | Eggs, beaten | | 6
| | Large ripe tomatoes | | | Bread crumbs | | | Pareve margarine |

Procedures:
| 1 | Drain and rinse spinach. | | 2 | Pick stems from leaves and squeeze dry. | | 3 | Saute" onion in shortening until transparent; add salt, pepper, and oregano, and stir. | | 4 | Mix spinach and eggs together. | | 5 | Add to onions and cook until moderately dry, stirring often so mixture does not stick to bottom of pan. | | 6 | Cut tops off of tomatoes. | | 7 | Scoop out pulp (you may save for other uses). | | 8 | Stuff tomatoes with spinach mioxture. | | 9 | Sprinkle with bread crumbs and dot with margarine. | | 10 | Place tomatoes in baking pan and bake a 350°F. for 30 min |
