Pinto beans with potatoes

Ingredients:
2 cupDried pinto beans, soaked
3 largePotatoes, chopped*
2 eachCelery stalks, chopped
1 tspSalt
1 eachOnion, thinly sliced
4 tbspPeanut oil
Procedures:
1Cover pinto beans with enough water to cover & bring to a boil.
2Reduce heat & simmer until they are just tender.
3Add potatoes, celery & salt & more water if necessary.
4Cook over low heat.
5Just before the potatoes & beans are tender, gently fry the onions in a heavy skillet.
6Using a slotted spoon, add the beans to the skillet & stir until well mixed & heated through.
7Serve hot over rice or a stiff porridge.
8*this dish traditionally uses manioc (casava) in place of the potatoes.
