Ingredients:
CAKE
1/2 cupButter
1/2 cupSugar, granulated
2 Eggs, beaten
1 cupMilk
1 tbspWhite vinegar
1 tspBaking soda
2 cupFlour, all purpose
1 tspBaking powder
1/4 cupCocoa powder, unsweetened
1/2 tsp-Salt
1 1/2 tspVanilla
VANILLA FILLING
2 Egg whites
1/2 cupSugar, granulated
1 pinch-Salt
2 tbsp-Water
1 tspVanilla
CHOCOLATE ICING
2 tbspButter
2 tbspCocoa powder, unsweetened
2 tbspLight cream, up to 3 T
1/2 tspVanilla
1/2 cupIcing (Confectioner's) sugar

12Combine dry ingredients with butter mixture with milk; stir in vanilla.
13Fill prepared muffin tins half full of batter.
14Bake in a preheated 350f oven for about 10 minutes or until a tester inserted in centre comes out clean.
15Cool for 10 minutes in pan.
16Turn out onto rack and cool completely.
17Vanilla filling: in top of a double boiler, set over boiling water, combine egg whites, granulated sugar, salt and water.
18With an electric mixer, beat until stiff and fluffy, about 3 to 4 minutes.
19Remove from heat and beat in vanilla.
20Chocolate icing: cream soft butter with cocoa powder.
21Blend in cream and vanilla.
22Stir in sifted icing (confectioner"s) sugar until icing is of spreading consistency.
23Slice cakes in half horizontally.
24Fill with vanilla filling and spread tops and sides with chocolate icing.
25Makes:about 12 medium or 24 small muffin sized cakes
