Merritt apple fritters

Ingredients:
4 largeFirm, ripe apples peeled and
Cored and cut crosswise in
Circles ?inch thick
2 tbspBrandy or dark rum
1 Egg, seperated
1/2 cupMilk
1 1/2 tbspBrown sugar
1 cupFlour
1/8 tspBaking powder
1/4 tspSalt
1/8 tspGround cinnamon
1/8 tspGround ginger
Icing sugar (to taste)
Chilled whipped cream
(for garnish)
Procedures:
1Pre-heat oil in deep fryer to 350-360°F after apples have marinated for several hours.
2Put apples in a deep bowl and pour brandy or rum over top.
3Cover bowl and let apples sit in the marinade for several hurs.
4Turn apples over often.
5Beat egg yolk with whisk in a bowl.
6Add milk ans sugar and mix together.
7Add dry ingredients and seasonings and blend well.
8Beat egg white with a beater in a stainless steel, glass or copper bowl until stiff peaks form a batter.
9Drain apples and dip them in the batter.
10Put apples, a few at a time, in oil in deep fryer at 350-360 and fry for 3-4 minutes - or until golden brown.
11Remove and drain on paper towels.
12Lightly sprinkle with icing sugar.
13Serve with chilled whipped cream.
