Ingredients:
12 eachOysters
1 eachMushroom-large, finely chopp
1 tspOnion-minced
3 tbspButter
1 tspFlour
1/2 cupMilk-warm
1/4 cupOatmeal-cooked
1 xSalt & pepper
1 tbspParsley-minced
3 tbspParmesan cheese-grated
Procedures:
1Wash & shuck oysters,putting them on the half shell.
2Saute the mushroom & onion in 1 tbs.
3Butter until soft but not browned.
4Add flour & stir to blend.
5Add milk & stir until thickened.
6Add oatmeal & stir well.
7Season to taste w/ salt & pepper.
8Stir in parsley.
9Place oysters under broiler for 4 min. remove & cover each oyster w/ some sauce.
10Sprinkle w/ parmesan cheese.
11Melt 2 tbs.
12Butter & drizzle a few drops over oysters.
13Return to broiler & cook for 5 min. or until browned.
14This recipe may be made w/ more oysters, depen- ding upon the rest of the dinner planned.
15It may also be served as a main course
