Caribbean okra salad

Ingredients:
2 tbspVegetable oil
1/2 lbsFresh, small tender okra
-rinsed, patted dry, caps
-trimmed
Salt
Freshly ground pepper
1/4 cupWater
1 tbspStrained fresh lime juice
1 smallGarlic clove, finely minced
Pn Ground allspice
1/4 tbspBottled Caribbean or other
-hot pepper sauce to taste
1 tbspChopped cilantro
Procedures:
1This delicious light salad comes from "faye levy"s international vegetable cookbook" (warner books).
2In a medium saute pan, heat 1 tablespoon oil.
3Add okra and saute 2 minutes.
4Sprinkle with salt and pepper.
5Add water, cover and cook over low heat for about 7 minutes, or until just tender.
6(add more water if needed).
7Transfer to a serving plate.
8Combine remaining tablespoon oil, lime juice, garlic, allspice, hot pepper sauce, salt and pepper.
9Pour over okra.
10Sprinkle with cilantro and dried tomato
