Cauliflower and hazelnut salad

Ingredients:
1/2 medCauliflower
-- cut into florets
25 gramsHazelnuts, coarsely chopped
1 smallBunch of watercress
-- washed and trimmed
25 gramsGruyère
-- cut into tiny cubes
2 tbspVinaigrette
1 Garlic clove, crushed
-- (optional)
Croûtons to garnish
Procedures:
1Steam the cauliflower florets until just tender but still slightly crisp.
2Cool, then mix with the chopped nuts, watercress and cubed cheese.
3Toss in the vinaigrette with the garlic if desired.
4Chill, and serve garnished with egg-roll slices.
