Drunken chicken salad

Ingredients:
4 Boneless chicken breast
1 cupSherry
1 tbspSalt
1/2 tbspSugar
1 Head red leaf lettuce
1/2 cupCilantro
3 tbspSesame seeds
4 Scallions
Procedures:
1Cut cooked chicken breasts in half.
2Put in large bowl with wine, salt and sugar.
3Toss, cover and marinate for 24 hours in the refrigerator.
4Next day drain off marinade.
5Arrange lettuce leaves on serving platter; place chicken pieces in the center.
6Sprinkle with sesame seed, cilantro leaves, and scallions.
