| tbsp | WINE VINEGAR | | 1

| pinch | PEPPER, FRESH GROUND | | 1
| | CLOVE GARLIC, MASHED | | 3

Procedures:
| 1 | Wash spinach carefully several times to get rid of all sand. | | 2 | Or buy pre-washed & trimmed fresh spinach, give it a quick wash, and dry well. | | 3 | Place spinach in a bowl, add pimientos,bacons & eggs. | | 4 | Combine oil & vinegar in second bowl. | | 5 | Add salt,pepper,garlic,anchovies & lemon juice. | | 6 | Mix well. | | 7 | When ready to serve, discard bits of garlic; pour dressing & warm bacon grease together and stir until blended. | | 8 | Pour over spinach, toss well and serve. | | 9 | Temperature(s): cold effort: easy time: 00:20 |
