Carrot and raisin salad

Ingredients:
2 cupCarrots, grated
1/2 cupCrushed pineapple (no sugar)
2 tbspRaisins
1 tbspLemon juice
1/4 cupLow-fat yogurt
2 tbspReduced-calorie mayo
1 packEqual (sweetener)
2 tspCoconut, shredded
Procedures:
1In medium bowl, combine carrots, pineapple, raisin,s and lemon juice.
2Using a wire whisk-in small bowl combine remaining ingredients except coconut; pour over carrot mixture and toss until well coated.
3Cover bowl with plastic wrap and refrigerate for at least 1 hour.
4Just before serving, toss again and sprinkle with coconut.
