| cup | Mayonnaise or salad dressing | | 2
| tbsp | Lemon juice | | 1/2
| tsp | Salt | | 1/4
| tsp | Ground ginger | | 1/8
| tsp | Pepper | | 4
| drop | Red pepper sauce | | 2
| cup | Finely cut-up cooked chicken | | 2
| | Hard-cooked eggs, chopped | | 1/4
| cup | Sliced green onions | | | -(2 to 3 medium) | | | TOPPINGS | | 3
| | Green pepper rings | | 1
| tbsp | Toasted sesame seed | | 3
| tbsp | Chopped green onion or | | | -green pepper | | 3
| tbsp | Chopped pitted ripe olives | | 3
| tbsp | Chopped pimiento, drained |

Procedures:
| 1 | Mix cheese, mayonnaise, lemon juice, salt, ginger, pepper, and pepper sauce. | | 2 | Stir in chicken, eggs, and ?cup onions. | | 3 | Shape into log, 8x2 inches. | | 4 | Wrap in plastic wrap; refrigerate until firm, about 4 hours. | | 5 | Cut each green pepper ring once to make a curled strip. | | 6 | Place strips diagonally across log, dividing log into fourths. | | 7 | Sprinkle each section with one of the four remaining toppings. | | 8 | Serve with crackers. | | 9 | Makes about 10-12 servings. | | 10 | Note: the toppings make it look fancier, but usually i dispense with them and just mound the mix into a serving dish. | | 11 | It"s great |
