Feta and mint bulgur salad

Ingredients:
1 cupBulgur, medium grained
1/3 cupFeta cheese, crumbled
-about 2 oz
1 largeTomato, seeded & chopped in
-? pieces
2 eachGreen onions, thinly sliced
1/3 cupCucumber, chopped, ? pieces
2 tbspMint, basil or parsley
2 tbspOlive oil
1 1/2 tbspRed wine vinegar
1/2 tsp-salt
1/2 tsp-pepper
Procedures:
1Bring large pot of water to a boil.
2Add salt, then bulgur (cook as you would pasta).
3Boil for 12 to 15 minutes, or until bulgur is tender but not mushy.
4Drain very well and refrigerate until cool.
5Meanwhile place feta, tomato, green onion, cucumber and mint into medium sized serving bowl.
6Gently toss.
7In small bowl, whisk oil with vinegar, salt and pepper.
8Add cooled bulgur to feta mixture and toss gently.
9Then toss with olive oil mixture.
10Taste and add more salt if necessary.
11Refrigerate until ready to serve.
12Salad taste best if made within a couple of hours of being made
