Ingredients:

| med | Tomatoes, quartered | | 1
| med | Onion, sliced | | 1
| med | Green pepper, cut in strips | | 1/4
| cup | Water | | 1 1/2
| tbsp | Sugar | | 1 1/2
| tsp | Celery salt | | 1 1/2
| tsp | Mustard seeds | | 1
| large | Cucumber, sliced | | 3/4
| cup | Cider vinegar | | 1/4
| tsp | Salt | | 1/2
| tsp | Cayenne pepper | | 1/8
| tsp | Black pepper |

Procedures:
| 1 | In a large bowl combine tomatoes, onion, green pepper, and cucumber. | | 2 | In a small saucepan combine vinegar, water, sugar, celery salt, mustard seeds, salt, cayenne pepper and black pepper. | | 3 | Bring to a boil, boil 1 minute. | | 4 | Pour hot vinegar mixture over tomato mixture. | | 5 | Cover and refrigerate 8 hours or overnight to blend flavors. | | 6 | Serve with slotted spoon. | | 7 | My note: this is hot. | | 8 | Even daryl said it was too hot! i think biting into those mustard seeds really gets ya. | | 9 | I"d cut the cayenne in half and probably the mustard seeds too. | | 10 | It"s very pretty to look at, and was a nice tomato dish to have in the dead of winter. | | 11 | We served it with a fairly bland dish made from just some short grain brown rice and some peas, carrots, and corn thrown in at the end (frozen). |
