French mushroom salad

Ingredients:
12 eachMushrooms
1 cupOlive oil
12 smallPearl onions
2 smallBoston lettuce heads
2 largeTomatoes
2 eachCelery stalks, diced
1 smallLemon, juiced
2 tspTomato paste
1 eachSprig fresh thyme, chopped
1 eachBay leaf
1 tspCoriander seeds
4 ozDry white wine
Salt & pepper
Procedures:
1Clean mushrooms.
2Leave caps whole, but chop stems coarsely.
3Fry in ?c oil till soft.
4Set aside to drain.
5Peel onions, quarter lettuce & slice tomatoes.
6Add to a frying pan with celery, lemon juice, tomato paste, thyme, bay leaf, coriander, wine & the rest of the oil.
7Season & simmer for 20 to 25 minutes.
8Onions should be tender.
9Remove mushrooms to a shallow dish & bring remaining ingredients to a rapid boil for 4 minutes.
10Pour over mushrooms & chill til lready to serve.
