Ingredients:

| | Potatoes, apprx. 2 lbs | | 1
| tsp | Tarragon, chopped | | 1/4
| cup | Onion, chopped | | 1/2
| cup | White wine, dry | | 2
| tbsp | Shallots, chopped | | 1/2
| cup | Olive oil | | 1/2
| tsp | Garlic, chopped | | 2
| tbsp | Wine vinegar | | 1/4
| cup | Parsley, chopped | | | Pepper, freshly ground | | 1/4
| tsp | Red hot pepper flakes |

Procedures:
| 1 | Rinse and drain the potatoes but do not peel them. | | 2 | Put them in a large saucepan. | | 3 | Add cold water to cover and bring to the boil. | | 4 | Simmer for about 20 minutes, or until tender. | | 5 | Cut the potatoes lenghwise in half. | | 6 | Cut each half into thin slices. | | 7 | Put the potatoes in a bowl and add the remaining ingredients, including pepper. | | 8 | Stir gently |
