Fruited rice salad on the half

Ingredients:
4 cupBrown rice, cooked
1/4 cupRaisins
1/2 cupDried apricots , chopped
1/2 cupPecans , chopped
2 Avocados
VINAIGRETTE
1/4 cupSafflower oil , or veg oil
1 tbspLemon juice
1 tbspRed wine vinegar
1 tspHoney
1/4 tspCoriander , ground
1/4 tspDijon mustard
Salt and pepper to taste
Procedures:
1Chill rice.
2Pour boiling water over raisins and apricots in small bowl.
3Let stand 10 minutes, drain and cool.
4Heat oven to 350°F.
5Place pecans on shallow baking pan; bake 5 to 8 minutes.
6Remove from oven, set aside.
7Prepare vinaigrette shake all ingredients together in tightly covered container).
8Toss rice, raisins, apricots, and pecans with vinaigrette, refrigerate 1 hour.
9Just before serving, halve, seed and peel avocados.
10Fill each half with rice salad and serve
