Gingered beet salad

Ingredients:
6 medBeets, scrubbed
1 tspOlive oil
1 1/2 tspFresh ginger, minced
2 tbspMellow miso
1 tbspSesame seeds
1 tbspLemon juice
Procedures:
1Boil beets in a large, heavy saucepan until tender.
2Remove cooked beets to a bowl of cold water.
3When cool enough to handle, slip off skins and discard.
4Slice or chop beets.
5In a small skillet or saucepan over medium heat, cook ginger and sesame seeds in oil, stirring constantly, for 1 minute.
6Remove pan from heat and stir in miso and ?cup beet cooking liquid.
7Cool dressing mixture slightly before adding lemon juice.
8Toss dressing with beets until well coated
