Ingredients:

| med | Beets, scrubbed | | 1
| tsp | Olive oil | | 1 1/2
| tsp | Fresh ginger, minced | | 2
| tbsp | Mellow miso | | 1
| tbsp | Sesame seeds | | 1
| tbsp | Lemon juice |

Procedures:
| 1 | Boil beets in a large, heavy saucepan until tender. | | 2 | Remove cooked beets to a bowl of cold water. | | 3 | When cool enough to handle, slip off skins and discard. | | 4 | Slice or chop beets. | | 5 | In a small skillet or saucepan over medium heat, cook ginger and sesame seeds in oil, stirring constantly, for 1 minute. | | 6 | Remove pan from heat and stir in miso and ?cup beet cooking liquid. | | 7 | Cool dressing mixture slightly before adding lemon juice. | | 8 | Toss dressing with beets until well coated |
