Sauteed shrimp and prawns with spicy plum sau

Ingredients:
1 lbsMedium shrimp, peeled and
Deveined
3 tspOil, divided
1 largeYellow bell pepper, stemmed
Seeded and cut into very
Thin strips
2 medGreen onions, thinly sliced
3/4 cupSpicy Plum Sauce (see
Separate recipe)
1 tbspFinely minced cilantro
Procedures:
1Prepare the shrimp and refrigerate until ready to cook.
2In a heavy skillet, heat 1 teaspoon oil over medium heat.
3Add half of the shrimp and saute until pink and just cooked through, about 2 minutes.
4Do not overcook.
5Remove from the pan and heat another teaspoon oil.
6Add the remaining shrimp and cook as before.
7Remove from the pan.
8Put the remaining teaspoon oil in the pan.
9Add the bell pepper and green onions; saute 3 minutes.
10Add the plum sauce and simmer 2 minutes.
11Stir in the shrimp and cook over medium-low heat 2 minutes.
12Sprinkle with cilantro and serve.
