Ingredients:

| lbs | Medium shrimp, peeled and | | | Deveined | | 3
| tsp | Oil, divided | | 1
| large | Yellow bell pepper, stemmed | | | Seeded and cut into very | | | Thin strips | | 2
| med | Green onions, thinly sliced | | 3/4
| cup | Spicy Plum Sauce (see | | | Separate recipe) | | 1
| tbsp | Finely minced cilantro |

Procedures:
| 1 | Prepare the shrimp and refrigerate until ready to cook. | | 2 | In a heavy skillet, heat 1 teaspoon oil over medium heat. | | 3 | Add half of the shrimp and saute until pink and just cooked through, about 2 minutes. | | 4 | Do not overcook. | | 5 | Remove from the pan and heat another teaspoon oil. | | 6 | Add the remaining shrimp and cook as before. | | 7 | Remove from the pan. | | 8 | Put the remaining teaspoon oil in the pan. | | 9 | Add the bell pepper and green onions; saute 3 minutes. | | 10 | Add the plum sauce and simmer 2 minutes. | | 11 | Stir in the shrimp and cook over medium-low heat 2 minutes. | | 12 | Sprinkle with cilantro and serve. |
