Ingredients:
2 eachStrips bacon, cut up
1/2 cupOnion, chopped
1/2 lbsBay scallops
1/2 lbsMushrooms, sliced
1/2 lbsSnow peas
1 tbspDry sherry
2 tspCornstarch
1 tbspWater
1 tbspLemon juice
1/2 tspSalt
Rice
Procedures:
1Brown bacon in skillet.
2Drain on paper towels and save 1 tb fat in skillet.
3Add onion and scallops and cook until scallops are white, about 3 minutes; remove and keep warm.
4Add mushrooms, snow peas and sherry; cover and cook 3 minutes.
5Combine cornstarch and water, add to skillet, and stir until thickened.
6Stir in reserved bacon and scallops.
7Stir in lemon juice and salt.
8Heat just to serving temperature and serve over rice.
