Ingredients:
4 New Red Potatoes *
1 lbsBay Scallops, Fresh
1 cupAsparagus Strips **
1/2 Red & Yellow Bell Pepper ***
2 Scallions, Thinly Sliced
2 tspMinced Fresh Ginger
1 tspGrated Lemon Zest
1/4 cupFresh Lemon Juice
1 tspVegetable Oil
2 tspLow Sodium Soy Sauce
1/4 tspFresh Ground Pepper
Procedures:
1* sliced ?inch thick.
2** cut into julienned strips.
3*** large red and yellow bell peppers, ?of each, seeded and diced.
4~--------------------------------------------------------------------- ~- heat oven to 350°F.
5Cut 2 pieces of parchment paper or aluminum foil, each about 16" x 24"; then fold crosswise in half so each piece measures 12" x 16".
6Cut half heart from each folded piece to make a full heart when unfolded.
7Place potatoes in small saucepan.
8Add cold water to cover and salt water.
9Heat to boiling, then cook over medium heat 3 minutes.
10Drain thoroughly.
11Open paper hearts and place potatoes in center of each heart next to fold.
12Combine remaining ingredients in mixing bowl and spoon over potatoes.
13Fold paper over and double fold edges to seal tightly.
14Place packets on baking sheet and bake 30 minutes.
15Transfer packets to plates and open
