Ingredients:
1 largeOnion [chopped]
2 Cloves garlic [chopped]
1/4 cupVeg. oil
1 1/2 cupRice [uncooked]
1/8 tspSaffron
1 Bay leaf
3 cup[or more] chicken broth
1 lbsShrimp [peeled/deveined]
18 Clams
18 Mussels [washed]
2 tbspPimentoes [chopped]
1 cupBaby peas
Procedures:
11) saut?onions and garlic in the oil in a skillet `til tender, then add the rice and saffron and saut?for 5 more min...
2Stir in the bay leaf and 2 cups of the broth and simmer, uncovered, for 10 min...
32) add the remaining broth and the shrimp, simmer for 5 min...
4Add the clams and the mussels and any additional broth (if necessary)...
5Cook for 10 min...
6Or `til the shells open...
73) discard the shells and the bay leaf, adding the pimento and the peas...
8Salt and pepper to taste...
9Heat to desired serving temp...
10And serve...
