Shad with sorrel

Ingredients:
1 lbsShad fillets, boned, skinned
Salt, to taste
White pepper, to taste
1/4 cupDry white wine
1 tbspLemon juice
1/4 cupChopped sorrel leaves
1 tbspUnsalted butter
Procedures:
1Place shad in a medium saute pan and sprinkle with salt and pepper.
2Add the wine and lemon juice and sprinkle the pan with sorrel.
3Cover and place over medium heat for 8 minutes.
4Remove the shad from the pan and keep warm on a plate.
5Add the butter and cook, stirring with a wooden spoon, until incorporated.
6Pour the sauce over the fish and serve immediately.
