Ingredients:

| lbs | Shad fillets, boned, skinned | | | Salt, to taste | | | White pepper, to taste | | 1/4
| cup | Dry white wine | | 1
| tbsp | Lemon juice | | 1/4
| cup | Chopped sorrel leaves | | 1
| tbsp | Unsalted butter |

Procedures:
| 1 | Place shad in a medium saute pan and sprinkle with salt and pepper. | | 2 | Add the wine and lemon juice and sprinkle the pan with sorrel. | | 3 | Cover and place over medium heat for 8 minutes. | | 4 | Remove the shad from the pan and keep warm on a plate. | | 5 | Add the butter and cook, stirring with a wooden spoon, until incorporated. | | 6 | Pour the sauce over the fish and serve immediately. |
