Shrimp /garlic sauce

Ingredients:
1/2 cupOlive oil
4 cupGarlic , thinly sliced
1 Red bell pepper , seeded an
1 1/4 lbsShrimp , med
3 tbspLemon juice
3 tbspDry sherry
1/4 tspRed pepper flakes
3 tbspParsley , finely chopped fr
Procedures:
1Fat grams per serving: approx. cook time: :05 heat the oil in a large skillet over medium-high heat.
2Add the garlic, pepper and shrimp.
3Cook for about 2 minutes, stirring constantly, just until the shrimp turn pink.
4Increase the heat to high.
5Add the lemon juice, sherry, hot red pepper, and salt to taste and bring to a boil.
6Serve immediately, sprinkled with parsley.
7The total cooking time shouldn"t be more than 5 minutes.
8Serve over rice with a salad for a delicious, quick meal.
