Ingredients:
4 6-8 oz. salmon fillets
REMOULADE SAUCE
1/4 cupTarrragon vinegar
1/4 tspCayenne pepper
1/2 cupSalad oil
1/4 cupChopped celery
1 tbspCatsup
1/4 cupGreen onion, chopped
1/2 tspSalt
1 1/2 tspPaprika
1 tbspChopped parsley
2 tbspPrepared brown mustard
Procedures:
1Steam the fillets in 1-2 cups of water depending on the pan used.
2For each cup, add 1 tablespoon of salt and stir.
3Steam the fillets for 9-10 minutes or until they flake easily when tested with a fork.
4in small bowl combine vinegar, mustard, catsup, paprika, salt, and cayenne.
5Slowly add salad oil, beating constantly.
6(may also be done in a blender).
7Stir in celery, green onion, and parsley.
8Allow to stand 3-4 hours to blend flavors.
9serves 4.
