Quick shrimp etouffee

Ingredients:
1 lbsShrimp, cleaned-deveined
1 smallCan tomatoes
4 Cloves garlic, minced
1/2 cupButter or oleo
1/2 cupFinely chopped parsley
1 tbspAll-purpose flour
Salt & pepper to taste
Procedures:
1Blend tomatoes including liquid until fine.
2In skillet, make roux of flour and butter.
3Add garlic and continue browning until tender.
4Add tomatoes, shrimp, salt and pepper.
5Simmer for 15 to 20 min. add chopped parsley before removing from heat.
6Serve over hot fluffy rice.
