Shrimp stuffed with herbed goat cheese

Ingredients:
1 lbsLarge shrimp, butterflied
4 ozGoat cheese
4 ozCream cheese
1 medClove garlic, minced
1 tbspWhipping cream
4 tbspChopped fresh cilantro
Salt and pepper to taste
2 tbspOlive oil
4 medTomatoes, peeled, seeded
And chopped
1 tbspChopped jalapeno chile
1 Lime (just the juice)
Procedures:
1Bake shrimp in preheated 350°F oven until barely firm, about 2 minutes.
2Remove and cool slightly.
3Mix goat cheese, cream cheese, garlic, cream and ?of cilantro together and season with salt and pepper.
4Pipe cheese mixture onto butterflied part of each shrimp with a pastry bag or spread on thickly with a knife.
5Increase oven temperature to 400 degrees and bake stuffed shrimp about 3 minutes or until opaque.
6Meanwhile, heat olive oil in a skillet and cook tomatoes covered until their juice is exuded, about 5 minutes.
7Add remaining cilantro, jalapeno, salt, pepper and lime juice to taste.
8Cook uncovered until moisture has almost evaporated, leaving just enough for a runny texture.
9Spoon tomato coulis onto warm plates and serve stuffed shrimp on top.
