Ingredients:
1 lbsShrimp, *
1/2 cupOnion, Finely Chopped, 1 Md
1 Clove Garlic, Minced
2 tbspVegetable Oil
2 tbspFlour, Unbleached
8 ozTomatoes, Cut Up, 1 cn
1 Pickled Jalapeno Pepper, **
1 1/2 tspCoriander Seed, Ground
1 tspSalt
1/2 tspInstant Chicken Bouillon
1/2 tspSugar
1/2 cupPumpkin Seeds, Toasted, ***
2 tbspLime Juice
GARNISH
Rice, Hot, Cooked
Procedures:
1* shrimp can be fresh or frozen.
2Shell and devein if needed.
3** pickled jalapeno pepper should be rinsed, seeded, and finely chopped.
4*** pumpkin seeds should be the toasted, salted seeds and should be coarsely chopped.
5Thaw shrimp if frozen.
6In a large skillet, cook the onion and garlic in oil until tender but not brown; stir in the flour.
7Add the undrained tomatoes, chopped jalapeno pepper, coriander, salt, bouillon granules, and sugar.
8Cook and stir until thickened and bubbly.
9Stir in the shrimp.
10Cover and simmer for about 10 minutes or until the shrimp are done, stirring frequently.
11Stir in the pumpkin seeds and lime juice, heat through.
12Serve over hot cooked rice.
