| tsp | Instant Chicken Bouillon | | 1/2
| tsp | Sugar | | 1/2
| cup | Pumpkin Seeds, Toasted, *** | | 2
| tbsp | Lime Juice | | | GARNISH | | | Rice, Hot, Cooked |

Procedures:
| 1 | * shrimp can be fresh or frozen. | | 2 | Shell and devein if needed. | | 3 | ** pickled jalapeno pepper should be rinsed, seeded, and finely chopped. | | 4 | *** pumpkin seeds should be the toasted, salted seeds and should be coarsely chopped. | | 5 | Thaw shrimp if frozen. | | 6 | In a large skillet, cook the onion and garlic in oil until tender but not brown; stir in the flour. | | 7 | Add the undrained tomatoes, chopped jalapeno pepper, coriander, salt, bouillon granules, and sugar. | | 8 | Cook and stir until thickened and bubbly. | | 9 | Stir in the shrimp. | | 10 | Cover and simmer for about 10 minutes or until the shrimp are done, stirring frequently. | | 11 | Stir in the pumpkin seeds and lime juice, heat through. | | 12 | Serve over hot cooked rice. |
